In recent years, the coffee industry has experienced what is known as the fourth wave of coffee, which emphasizes the quality of the coffee bean and the ethical practices used to produce it. This movement has led to the emergence of specialty coffee roasters, who are dedicated to sourcing ethically and roasting only the finest coffee beans from around the world.

One such roaster is Redemption Roasters who supply Artistry Coffee. They began operations in Aylesbury Young Offenders Prison with the mission of reducing re-offending rates by providing young people with valuable barista and roasting skills. Today, Redemption Roasters operates in nine prisons and has an expanded roastery facility in HMP The Mount near Hemel Hempstead. The company sources high quality beans and roasts them in small batches.

One of the latest coffees from Redemption Roasters is their Ryamukona, Burundi Ethical Coffee Beans. This coffee is a carnival of colorful flavor notes, with vibrant tropical fruits and punchy citrus tones that will tantalize your taste buds. The washing station of Izuba is located in Runinya, in the Kabarore Commune of Kayanza Province in Burundi. Around the Izuba washing station are three luscious green hills – and Ryamukona is one of them. The premium asking price for this coffee helps to support local families by ensuring employees at the washing station are paid 25% higher than other local washing stations.

The preparation process for the coffee is known as ‘honey’ because the coffee once picked and sorted and having skins and pulps removed, is allowed to be dried without washing off the sticky-sweet outer layer. Less time is spent in water (an environmental benefit), and the resulting coffee is generally sweeter, has more body, and a more fruity flavor.

We have a Brazilian bean Fazenda Rio Brilhante from the Carrado Mineirio region grown at c1050m in a large coffee farm established about 30 years ago in an area brought to life by clear bright waters – Rio Brilhante.

With taste notes of Strawberry Bubblegum, Lime and Cream Soda this one mixes smooth sweetness with a sharper edge!

Also new is Altos De Erapuca from the slopes of the second highest mountain in Honduras situated at 1300 to 1360m, from younger coffee trees and using a well constructed drying process mixing natural drying and controlled temperature mixed drying of the beans to regulate moisture and.

This bean has taste notes of Baked Pear, Vanilla, and Cacao – so a smoother taste overall is to be expected.

An updated roast of Finca La Senda is also now available, alongside the option of some of the older roast still (at a reduced price). These beans are from high up in the volcanic Guatemalan region of Acantenango. From a smaller farm, and mixing the characheristics associated with coffee from this are – sweet flavours, bright acidity and good body.

Our price policy on coffee beans is to reduce the cost of the beans for every month after roasting if we still have stock. We aim to have a mix of new roasts and older roasts in stock, depending whether your priority is your pocket or the recency of roast.

Degradation is kept to a minimum with a one-way valve so as well as being kept away from light, and heat, the beans are also kept away from exposure to air.

Our coffees have a story of origin, and also a story of social responsibility: Being roasted as part of a project which aims to reduce reoffending rates by offering some young people in Aylesbury Young Offenders Institute the opportunity to learn about coffee. This includes training as competition quality baristas, and under the tutorship of a Head Roaster to learn about the art and science of coffee roasting.

To use, you place the lower handle on top of a mug add a paper filter, attach the coffee making chamber – then water and coffee grounds and stir. Position the upper plunger handle and allow to brew for a minute.

Then TWIST !

Pull the handles together and let the coffee come through under pressure to the mug below. You should find a clean, strong, black coffee which you can enjoy espresso style or as a base for any coffee.

The AeroPress is a well renowned coffee maker which makes reliable good coffee very quickly. As we say it’s #QuickButNotInstant reflecting the fact that it’s far ahead of instant coffee yet doesn’t take much longer to make.

The AeroPress is described as making espresso like coffee – recognising that it’s really good but not a pure espresso.

This new attachment device from Fellow products though can supercharge your exisiting or new AeroPress delivering more specific espresso shots.

The Fellow Prismo – attaches to the bottom of the AeroPress instead of the mesh cap. It features a pressure actuated valve which is the main bit of magic! It stays sealed until you press down – this helps facilitate the espresso shot, but also gives you other options for making cold brew or brewing with the immersion method without inverting.

The Fellow Prismo comes with a reusable fine metal filter and has a no drip seal too – giving you more control over generating an espresso shot (or the immersion method).

Press down and the coffee is forced under pressure through the central valve.

We stock genuine Fellow Prismo but do watch out for cheap imitations available by some online retail options – if you don’t see the Fellow logo (the O and bow tie mark underneath) on the product photos, it’s probably not genuine. Also the central valve and surrounding mouldings look a little different.

San Pedro Necta (Guatemala) Coffee Beans from Redemption Roasters

The high mountains of Guatemala near the town of San Pedro Necta is the location of the farm Finca La Providencia – the origin of the San Pedro Necta beans now in stock at Artistry Coffee in Duck Farm Court, Aylesbury or online at artistrycoffee.co.uk.

The farm elevation is between 1550 and 1900 meters – and an important advantage in the production of very high quality coffee.

Several springs across the area bringing abundant water resources.

The farm has passed through three generations who know the region well and are dedicated coffee producers so they take measure to help preserve the local ecology and prevent soil washing down the steep inclines.

Coffee cherries are selectively hand harvesting and eco pulped with Penagos pulpers, reducing the impact of wet processing. Post-pulping and removal of mucilage ( a slippery substance surrounding the bean) the coffee is dried on the farms patios, or in wet weather in the farms guardiolas at a slow and even temperature.

The coffee variety is Caturra from Huehuetenango region (Guatemala) and is processed with the washed method for a cleaner and brighter coffee.

TASTE NOTES are : Dark Chocolate, Black Cherry, Walnut.

This bean is recommended for best use making espresso.

At Artistry Coffee we’ve been on a journey discovering more about coffee for a few years.

As part of our own home move into the Aylesbury Vale area recently we also reviewed our coffee supply and managed to connect with a great project based in Aylesbury Young Offenders Institute – which we first heard about at London Coffee Festival 3 years ago.

The project, run by Redemption Roasters as part of a Ministry of Justice initiative, aims to help reduce reoffending rates by providing real skills for young offenders – training them upto competition quality in barista skills. The hope is that on release they may have an opportunity to find work and Redemption have assisted in placing some young people from this project in their own coffee shops too.

Aylesbury Prison is also the location of a high quality coffee roastery where the young offenders can learn about the art & science of roasting coffee beans under the expert tuition of the Head Roaster.

We’ve been excited to not only support this project but also to upgrade our coffee supply in the process, with expertly roasted single origin coffee beans from know locations.

The Stylish Compact Mini Slim PRO from Hario

For many years we’ve stocked Hario’s Mini Mill Slim coffee grinder – which has been a popular choice with many.

The Mini Mill Slim a compact straightforward grinder, which is easier than many to adjust for the grind size you wish to use on your latest coffee beans.

Well it’s now got a new sibling!

The Mini Slim PRO from Hario is a timely update on the original, with some useful modifications.

The most obvious feature is the stainless steel in place of many of the plastic parts, and the version that we stock has a  black hopper and chamber rather than clear.

The clear acrylic lid has also been modified and the PRO version has a silicone grip around the circumference.

The important grinding burrs are still ceramic, which is helpful for good functioning and durability.

So the key thing is that many of the materials of the classic product have been upgraded, and it has a very stylish look about it!

They say “if it ain’t broke don’t fix it” – but his shows that “if it ain’t broke” it may still be upgraded!

Estrella Naranjo (Costa Rica) Coffee Beans from Redemption Roasters

Costa Rica is the source of the Estrella Naranjo beans that are now in stock online at artistrycoffee.co.uk or in person at Duck Farm Court, Aylesbury.

Redemption Roasters in Aylesbury HMYOI roast this bean expertly as part of the project to give young offenders in this institution knowledge of coffee, the roasting process and competition level barista skills.

We’ve been learning something more about the origin, production, and variety:

Producers in the Naranjo area of Costa Rica are selected to participate in the Coopro Naranjo R.L. based on the quality of their coffee.  The coops aims are to support the producers and promote sustainable production.

Strictly ripe cherries are selected through the  harvest process, and production of high quality coffee is rewarded. Farms are located between 1300 and 1700 meters above sea level.

Estrella Naranjo beans from Costa Rica have tasting notes of Apricot, Nectarine, Citrus. They are sourced from Los Robles West Valley. The ripe cherries are processed with the black honey process whereby the beans are part washed and some of the sticky substance (due to the ripeness) is left on the beans as they dry for longer.  The beans are moved at points through the drying process (stirred, raked etc). The black honey process is the most expensive, intensive, and complex process. It results in a more full bodied and flavourful taste.

The beans are arabica from the Villa Sarchi variety (Bourbon related) which is well adapted to high altitudes. And a dwarf variety tolerant of strong winds.

We knew that the Handground Coffee Grinder would be a really interesting product when we first heard about it on Instagram, and then became some of the first backers of it on Kickstarter a few years ago.

It was an innovative approach to ask people who make coffee to contribute to the design from all around the world – with choices for the look, materials, accessories, and mechanics etc being made by the crowd through Instagram, Kickstarter and online surveys.

Two of the most useful features of the Handground Grinder are the side mounted handle, which makes the handgrinding of coffee beans a simpler process, and the grind control dial, making grind size less guesswork and more precise.

It is a large device, and will sit well aside your other coffee making products.

At artistrycoffee.co.uk we again sold out of the crowdsourced Handground Precision Coffee Grinders a couple of weeks ago – but we’re pleased to now have some new stock in.
